a close up picture of a spicy buffalo deviled egg

Deviled eggs stand out as a versatile choice for various gatherings, from BBQs to potlucks and holiday dinners. Serving as both an appetizer and a side dish, these eggs adapt to diverse tastes. Whether kept simple, adorned with olives, or enhanced with various fillings like meats, salsas, or relishes, deviled eggs offer flexibility. With this recipe for spicy buffalo deviled eggs, spice enthusiasts can savor a versatile option that adds heat to the dining experience. In fact, except for the cuttlefish ink incident, Halloween of 2019, you almost can’t go wrong.

In these spicy buffalo deviled eggs, traditional elements of the classic deviled egg give way to a flavor reminiscent of hot chicken wings. While the iconic deviled eggs typically feature a pale yellow hue, dusted with paprika and possibly adorned with an olive, this recipe takes a bold departure. Instead of the customary blend of hard-boiled egg yolks, mayonnaise, and mustard, we introduce a mix of sour cream and buffalo sauce into the yolks, adding a flavorful twist to this beloved dish.

This alteration imparts an orange hue with a spicy kick, and you can adjust the heat level by controlling the amount of hot sauce and chili powder. However, exercise caution not to go overboard, as excessive sour cream may compromise the stuffing's structure, transitioning it from a filling to more of a sauce.

Instructions- Spicy Buffalo Deviled Eggs

Hard Boiling the Eggs

In the timeless tradition of deviled egg preparation, the journey commences with the art of hard-boiling eggs. Various methods can achieve this, and the specific approach is flexible as long as the result is perfectly hard-boiled eggs. Begin by setting a pot of water to boil, ensuring it's not overly filled. The pot needs adequate space for the eggs to be immersed fully. While some add salt or baking soda to the water, it's not mandatory. Allow the water to reach a rolling boil before gently placing the eggs using a ladle to prevent potential cracking. Let the eggs boil for 10-12 minutes before draining the hot water and cooling them under running tap water. I prefer to peel them immediately after cooling. Once peeled, slice the eggs in half lengthwise, transferring the yolks to a bowl. The egg whites, with their peculiar shape and slippery texture, can be conveniently stored in a deviled egg container, though it's not strictly necessary.

Making the Filling

For the filling, start by mashing the yolks. Using a fork is recommended to avoid the filling getting lumpy or binding inside a whisk. Mash the yolks thoroughly until they are crumbled into smaller pieces.

After pre-mashing the yolks, add the liquids and spices. This step allows customization—adding salsa, for instance, could give your eggs a southwestern flair. In this recipe, incorporate about 6 tablespoons of sour cream, 2 tablespoons of buffalo sauce, 1/2 teaspoon of chili powder, approximately 1/4 teaspoon each of cumin and mustard powder, and a few dashes of salt and pepper.

Whip the ingredients together thoroughly to achieve a smooth texture, eliminating any lumps of egg yolk. This is the perfect moment to taste the filling and fine-tune the seasonings according to your preference. You might desire more chili powder or feel that a touch more salt is needed. Additionally, consider the moisture content of the filling—if it's too dry, you can add more sour cream or buffalo sauce to achieve the desired consistency.

Once the filling is thoroughly mixed, it's time to fill the eggs. You can use a spoon or, for added convenience, a pastry bag. Another handy trick is to scoop the filling into a sandwich bag, cut one corner, and create an impromptu piping bag for easy and precise filling.
