Fogs, those delightful, sweetened, tea-based lattes, made by combining the tea with a flavored extract and artfully blending it with steamed or frothed milk. While the iconic London Fog boasts its renowned combination of Earl Grey tea, sugar, and vanilla extract, our Vermont-inspired creation takes this classic to new heights. Vermont, while geographically distant from the ‘Old’ England, undeniably holds a distinguished place at the ‘New’ England table. Despite its small size, this state is renowned for its rich dairy agriculture and the breathtaking spectacle of autumn foliage that graces its landscapes. Montpelier stands as the state capital, and the Morgan Horse, a symbol of strength and endurance, claims the title of the state animal. Amidst this picturesque setting, the Red Clover blooms as the state flower, while the dairy farms contribute to the choice of milk as the official state beverage. The sweet embrace of the iconic sugar maple and state tree, Vermont has crafted a unique creation - the Green Mountain Fog, a distinct take on the London Fog. While horses may not be in the business of making tea, we've artfully combined elements emblematic of Vermont's character to present a delightful infusion that pays homage to the Green Mountain State's natural beauty and rich agricultural heritage.

Ingredients


  • Red Clover Tea (1 cup (240ml)brewed)

  • Steamed Milk (1 cup (240ml) whole milk)

  • 1 Tsp (5 ml) Maple Sugar (or 1 packet sweetener)

  • 1 Tbl (15ml) Maple Syrup (the darkest amber grade that you can get your hands on!)

  • Optional, more maple sugar to garnish

There are two components to making this drink. One is to brew your tea, and the other is to make your steamed / frothed milk. As luck would have it, it takes about as long to make the steamed milk as it does for the tea to brew.

Preparing the tea:


Begin by preparing a soothing cup of Red Clover tea using your preferred method. I typically follow the traditional method of bringing the kettle to a lively whistle and pouring the hot water over a tea bag. However, feel free to use the method that works best for you. The key is to create a cup of tea that forms the basis for the Green Mountain Fog experience.


Making the steamed / frothed milk:

While the teabag is steeping, we move on to the steamed milk. For simplicity, we are going to make more of a frothed milk because not every home has a milk steamer just laying around. Plus, it only takes about as long to make the milk as it does for the tea to steep so it is honestly the perfect pairing. Honestly this could nearly be a tutorial and recipe all by itself.


Start by heating 1 cup of whole milk (roughly 240 ml.) in a small pot over medium heat. Ensure you whisk or stir gently, preventing the milk fats and sugars at the bottom from burning. Heat it until you notice steam rising, right before it starts to bubble. If the milk simmers, it's gotten too hot, so promptly remove it from the heat. Aim for a temperature between 140 to 160 degrees Fahrenheit (60-72 Celsius), as it works well. Transfer the steaming milk to another container, like a mason jar, and use a milk frother to aerate it until it almost doubles in volume. The result? Several ounces of velvety liquid at the bottom, crowned with a luscious layer of whipped foam on top.

Constructing the Green Mountain Fog:

Once the tea has completed its steeping, squeeze out and discard the Red Clover tea bag. In your mug, stir in a teaspoon (5ml) of maple sugar and a tablespoon (15ml) of maple syrup. I prefer the darkest amber grade you can get your hands on. Also since it is a 'Green Mountain' Fog, bonus points for Vermont Maple Syrup.


Next, gently pour in the steamed milk, using a spoon to retain the foam in the jar while letting the velvety liquid flow into the tea. Gently scoop the foam and spoon it onto the top of the tea. To garnish this drink, add a sprinkle of the maple sugar over the top of the milk foam.


The Green Mountain Fog, a Vermont-inspired twist on the classic London Fog tea-based latte, features the delightful combination of red clover tea, maple sugar, and maple syrup. This sweet beverage boasts a robust maple flavor with a subtle hint of clover, as the Red Clover tea itself has a gentle taste. To enhance the experience, consider pairing it with tart apple slices such as Granny Smith or opting for bold and sharp cheeses like Cabot Vermont Sharp Cheddar or Plymouth Hunter Cheddar. If you prefer a sweeter accompaniment, try dipping extra crunchy ginger snaps or indulging in a cranberry jelly thumbprint for a burst of flavor!
