Preparation


To create the perfect environment for preparing this dish, follow these steps to prepare your kitchen:

Preheat the Oven:

Ensure your oven is well preheated to 350 degrees Fahrenheit.

  • (176.67°C or Gas Mark 4)

Place Oven-Safe Dish with Water:

  • Position an oven-safe dish filled with water on the lowest oven rack. Opt for a container with ample surface area to maximize water evaporation, creating steam.

  • The larger the surface area in the container allows more water to evaporate, generating steam. This steam rises to the upper oven area, contributing to the cooking process by combining dry heat conduction through the muffin pan with wet cooking through steam.

Preheat with Water:

  • Start preheating the oven with the dish of water inside. This ensures a hot and steamy environment by the time you're ready to place the egg bites in the oven. The steam bath is important for cooking the eggs. If the steam escapes or the oven isn't fully preheated it will affect cooking time.

By following these steps, you'll create the ideal cooking conditions, resulting in egg bites with a perfect combination of moist tenderness from steam and even cooking through dry heat conduction.

Instructions for making Garden Vegetable Egg Bites with Ham & Cheese:





  1. In a large bowl, crack approximately 10 eggs, adjusting the quantity based on egg size. If using small to medium eggs, you may need a few more, and for jumbo duck eggs, you might need fewer (around 8-9).

  2. Add 2 tablespoons of Garden Vegetable Powder, 1 tablespoon of parsley (for a vibrant green color), and salt and pepper to taste. Include about half a cup of ricotta cheese.

  3. Use an immersion blender to thoroughly mix the ingredients until the egg whites and yolks form a consistent, solid yellow color.

  4. Pre-grease a muffin pan to prevent sticking. Using a ladle, evenly distribute the egg mixture into the muffin cups.

  5. Sprinkle diced ham and approximately ¾ of the shredded cheese into each cup. Use a chopstick or similar tool to give each cup a slight mix before topping with the remaining cheese.

  6. Bake for approximately 20-25 minutes, ensuring the eggs are cooked through and just starting to retract from the pan's edges.

  7. Remove from the oven and allow the egg bites to cool before serving.
